When Dusten and I first got married, we ate a lot of cheep food. I mean, we ate well, but it was on a tight budget. I also was not gluten free and not strict on my dairy intake at the time. One night, I had a pound of ground beef, a box of noodles, a can of peas and carrots and a craving for Alfredo Sauce. I’m big into bowls or all the food groups combined into a one dish meal. So I got creative with what I had. I fully cooked the ground beef, noodles, and peas/carrots and then made a homemade Alfredo sauce with coconut milk and Parmesan cheese. Reduced diary, but not non-dairy. It was delicious. I went to the internet to name the dish and the winner was “Noodle Fun Bowl”. It still exists today in my meal rotation!
Sometimes it’s daunting to wait on the water to boil after you’ve worked a full day and your preschooler is yelling that they are hungry. But on Tuesday I got home early enough to boil water for pasta. I had cooked the ground beef the night before because I knew my time was limited. I boiled the noodles with a bag of frozen peas/carrots for the allotted time and then drained them. I then added the cooked ground beef and stirred in a jar of vegan Alfredo sauce. Everybody loved it! I’d love to know if you try this recipe!

Noodle Fun Bowl
Ingredients
- 1lb Ground Beef
- 1 bag Frozen Peas/Carrots
- 1 jar Alfredo Sauce (I use Simple Truth Vegan Alfredo)
- 1 box (16oz) of cooked pasta (I like penne or something small)
Directions
- Brown Ground Beef in a skillet. Set aside.
- Cook the pasta with the frozen peas/carrots according to the directions on the pasta box. Drain the pasta with a strainer.
- Combine the ground beef, pasta/peas/carrots, and a jar of Alfredo sauce over low heat for a few minutes stirring until it’s all combined.
- Serve in a bowl!
Here’s the Vegan Alfredo Sauce I use! It generally needs some salt added, but it’s got a great flavor and texture.
